Thursday Thoughts: March 6, 2025

A couple of weeks ago, my older child turned 25!  To celebrate, we got together with my in-laws to have brunch.  While there, I had the most amazing breakfast, which is what leads me to today’s question: what is your favorite breakfast food?

Mine has always been French toast. I don’t know why, but any chance I get, this is what I order.  It’s always so warm, so comforting, and a little bit sweet, which is how I like my breakfast.  I know, it’s weird, but here we are.

So, when I saw cannoli French toast on the menu, I immediately knew what I had to have it.  It came out looking like a small loaf of bread, topped with a mixture of ricotta and mascarpone cheese, pistachios, and chocolate pearls (shoutout to the molecular gastronomy being used here).  Also, maple syrup, but I figured that syrup was rather superfluous when you considered everything else already on this massive meal.

I have to say, it is the best thing I have ever eaten for breakfast.  And that’s even considering the carrot cake pancakes I once had that came with cream cheese frosting.  Yeah, those were good, but this French toast was out of this world.

Of course, when I’m cooking for myself, I tend to take a much simpler approach.  Omelets are a good go-to as they’re quick, easy, and filling.  Waffles are also quick and easy and give you leftovers.  Hint: toss the leftovers into the toaster or toaster oven the next day to crisp them up.  So good.

I’ll also not ever turn down the old standbys – bacon, eggs (sunny-side up, thanks), toast of all kinds, pancakes, and yes, even oatmeal.  I really do love oatmeal, which has gotten me some strange looks over the years.  But it just hits the spot.  Even better is that it’s super customizable, too.  Add your favorite sweetener – brown sugar, honey, maple syrup – and then go crazy.  The possibilities are endless with fruit, nuts, nut butters, you name it.  Oatmeal is a big, blank canvas waiting to be used.  Kind of like an omelet, but better.

So, now that I’ve made myself hungry, what are your favorite breakfast foods?  Is there a restaurant near you that makes something unique that you can’t resist?  I’m curious to see what you’re all into, especially if you’re from outside the US.  Global cuisine is an interest of mine and I always find it interested to see what other countries and cultures eat regularly.

  1. I don’t think I would ever turn down cannoli French toast. Sounds great. At home I’m a very boring breakfast person…oatmeal with blueberries, at least blueberries whenever I can get them fresh.

    On the other hand, I love a good old breakfast…scrambled eggs, bacon, fried potatoes with onions..mmm. But, I hate to make that in the morning. To get that, you either have to take me to the restaurant for breakfast or eat at my house for lunch maybe.

      You know, now that I’ve *had* cannoli French toast, it’s going to be the gold standard from here on out. LOL

      I do love a good bowl of oatmeal!

      Couldn’t agree more – it’s a fantastic breakfast, but more effort than I’m willing to put out.

  2. Cannoli French toast sounds so sinfully delicious… and right here at the start of Lent too!! Shame on you.

    I’m from the south, y’all, and my comfort food breakfast is grits, eggs over easy, and breakfast sausage… and if it’s all together in one bowl, even better.

    I love most breakfast foods, though… (okay, I love food period). Oatmeal is the one exception (my husband loves it, and Grandmama loved Cream of Wheat). I think it’s a texture thing.

    A shout out to a wonderful breakfast food I’ll probably never have the chance to eat again unless I learn how to make it. Utah scones They are as much “avoid during the Lenten season” as the canolli French bread sounds!!

      Haha, same, I do love to eat. Totally understand about the oatmeal, too, even if it is one of my favorite things.

      Okay, those scones look fab! But I think I’ll stick to my cheddar and chive scones since they’re easier. LOL

  3. Mine is so very basic, lol. It’s bacon and eggs with toast and coffee. I make that pretty much every other weekend.

    Right now I have jars of jam from the local apple orchard that I was gifted at the holidays, so the toast gets a little embellishment. But I could walk into any diner, any decade in the last century, and be perfectly happy with whatever bacon/egg/coffee they serve up.

    For weekdays, it’s mostly either oatmeal or yogurt with raw oats on top. Some fruit. Keeps it simple.

      Bacon and eggs is a classic for a reason!

      That local jam sounds fantastic! One of my kids went to a date farm yesterday and brought me some salsa. But she said they had homemade date jam that just sounded amazing.

      Agreed. I had Cheerios this morning with a banana, quick and easy!

  4. I do like French Toast, so I’d probably give the cannoli one a try! My absolute favourite when out & about is Eggs Benedict. I find it hard to go past on a menu. Would never make it at home though – too complicated! At home I go for the standard full breakfast of fried or scrambled eggs on toast, with bacon, hash browns & mushrooms if it’s the weekend – maybe once every few weeks, with whichever of the above we have (always eggs!), or more often with the (adult) kids it’ll be boiled eggs with toast. Weekdays, I can’t take much sweet that early, and I need quick, so it’s usually Vogel’s toast (unique to NZ, Vogel’s is a dense textured bread that to my mind can only be eaten as toast – I can’t do it in sandwiches) with butter (the real stuff, no margarines or other spreads), and of course it must be hot enough to melt the butter and still be warm when you eat it.

    I don’t do porridge very often (we are British at heart in NZ so it’s porridge, not oatmeal!) but if it’s really cold I sometimes change from Vogel’s toast and do it – we can get these lovely sachets with apple and sultanas that you microwave with water or milk for 90 seconds that are delish! I add more sultanas though as they aren’t particularly generous with them!

      I’ve never had eggs Benedict, however – and this might sound crazy – I have made it for my kids. LOL I think we’ve talked about that bread, honestly, it sounds familiar! But I agree with you – quick and easy during the work week is the secret. As much as I love to cook, I can’t lie – I love instant oatmeal (porridge!) – it’s always just the right sweetness and so easy.

    Waffles with strawberries are my go-to. I found a recipie a few years ago for caramel pecan coffee muffins which are delicious and we have them for special occasions.

    If I’m heading out of town and by a Country Kitchen restaurant (the closest one is about 100 miles north), I’ll get the chocolate strawberry crepes (or as I call them, chocolate decadence). These are crepes stuffed with vanilla whipped cream cheese, topped with chocolate sauce and then topped again with strawberries, chocolate chips, powdered sugar, and whipped cream. It’s definitely a once-every-five-years item.

      Those both sound amazing! Pecans are one of my favorite nuts.

      Oh lord, those crepes! Reminds me of this nutella stuffed French toast I had once. Definitely not a weekly indulgence!
